One does not simply have 'one' Thanksgiving Side.

Gravy is a fat, not a carb. This is very confusing for a pedant.

There's no way in hell Mac and Cheese gets past Green Bean Casserole in the first round unless the fix was in, or the vote was open to kids ten and under.

As for Gravy?  "Gimme a big bowl of gravy, please, and pass me a spoon!" said no one, ever. It's always served with something else, whether it's mashed potatoes, dressing/stuffing, or ladled over the slices of turkey meat itself. If anything, it's a sauce – or maybe even just a garnish.

The way I see it, it should have been Green Bean Casserole vs Brussel Sprouts and Cranberry Sauce vs Stuffing in the second round of the right-hand bracket, with Casserole and Stuffing meeting in the third round (where Stuffing would have prevailed regardless).

To me, stuffing and gravy are the stars of Thanksgiving, and always live together.
