My fiancée is a woman originally from East Texas (and how a Wisconsin born-and-raised cheesehead like myself ever was attracted to her is a question that simply cannot be logically answered). She did Thanksgiving dinner for me last week, with cornbread dressing.   I am a convert.   Phooey on sage-and-onion!!
