I know what they're talking about -- packaged cheese slices, laid out so that each one is just a little off-set from the one beneath it (like fanning out a deck of cards) making it easy to grab one piece at a time -- but I do believe this is the first time I've seen them described using this particular term. Does tend to make one's mind wander to a point where you can easily imagine cheesemakers comparing the advantages of various types of cheeses with regard to their ability to shed water (which puts Swiss cheese at a distinct disadvantage!) or withstand high winds.
