I make a lot of homemade ice cream and one of my early issues was it being rock hard once frozen (no milk for me, I use heavy cream and almond milk). I assumed it was additives in the store bought stuff that kept it scoopable. So I turned to alcohol. Three tablespoons of kahlua in a batch of chocolate - yum! Still, I'd like to make it alcohol free. So I have a couple of options to try, starting with to churn or not to churn.
With a custard base ready to churn, pour into a frozen bowl, whip it a bit and then churn or not. Will give me some volume issues for the ice cream maker though. Or perhaps churn and when ready to freeze, pour that into frozen bowl and whip it a bit. I kind of like the idea of both whipping and churning but either way, something new to try.
