Rising Bread looks kind of tough. Bur grocery stores
seem to have recovered in the baking goods area, so
thought I'd share a really simple bread recipe that has
never failed me:

3 Cups all purpose flour
1/4 teaspoon instant yeast
1 1/2 teaspoons salt
1 1/2 Cups water

Mix all in a large bowl into a shaggy dough.

Cover bowl with plastic wrap and rest at room
temperature for 12 to 18 hours.

Flour work surface, put dough on top and fold
it twice to deflate. Let it rest for 15 minutes.

Sprinkle with flour to handle, shape into a
saggy ball and let rest on floured surface
another 1-2 hours.

Preheat oven to 450

Place cast iron or other lidded pot into oven
and heat for at least 30 minutes.

Carefully tip dough into pot. Sprinkle with
salt, seeds, etc. if desired.

Bake covered for 30 minutes, then uncover and
bake another 15-30 minutes until browned as desired.

Cool before cutting - don't refrigerate.

If you really like it, you may find yourself
having a loaf in rotation quite a bit. . .

This is what you get when you elect a businessman with ZERO knowledge of or experienced public service. Oh, wait...

(Our TN governor is the owner of a large heating and air-conditioning business and has bought himself a great deal of political clout. We call him "Gov. HVAC.")
