I tried to explain it to my son, who says he can't meditate because he gets distracted too easily and his mind wanders. I told him, your brain is going to think thoughts - thinking is what a brain does - mindfulness meditation is simply noticing when your mind wanders, and gently redirecting your focus back to the breath. Over and over again.
A beginner's resource that helped me is a book called "Mindfulness in Plain English" by Bhante Gunaratana. It's (legally) available unabridged online, if you don't want to buy a copy.
